[Quick & Easy] Leftover Frittata





As usual, I was thinking about how to use up those leftover ingredients. I have no idea why I can't seem to get rid of those leftover ingredients in my refrigerator. Like, never ever. Where are they coming from? Where are the ingredients that are not leftovers?! Anyway, I managed to make a quick, yummy meal from those leftover veggies and some cheese.
These are the things you'll need:

1 cup chopped mushrooms
1 cup broccoli heads (I hate the stems!)
3/4 cup chopped celery
1 large tomato, chopped
6 large eggs
3 tablespoons milk
3/4 cup shredded cheese
Salt and Pepper to taste
Vegetable oil


Step 1. Let's crack the eggs into a mixing bowl! Yay! This is definitely my favorite part of cooking.
Step 2. Add milk & mix well.
Step 3. Pour the veggies into a big pan with some oil drizzled over. Add salt & pepper.
Step 4. When the veggies are cooked enough, add the egg mixture. Let it cook.

Step 5. When the egg mixtures is hardened, add the cheese. Put a lid on the pan and let the cheese melt.
Step 6. Ready to serve!
It could have been also nice to add other ingredients, like squash or asparagus, and I just remembered now that I forgot to include the onions. It's still good anyways.
