Semi-Homemade CPK BBQ Chicken Pizza


This is how I make California Pizza Kitchen style BBQ chicken pizza at home without the mess, simply using pre-made pizza dough. It's really delicious and super quick and easy to make. You'll never go wrong with this recipe!

Ingredients:

Pre-made THIN CRUST pizza dough
Cooked chicken, shredded or chopped
Red onion, sliced
Mozzarella cheese, sliced or shredded
Cilantro
BBQ sauce (any brand)
Olive oil

Directions:

1. Heat oven to 400°F. Grease nonstick cookie sheet with olive oil.

2. Unroll dough onto cookie sheet. Prebake dough for 5 minutes.
3. Spread with BBQ sauce. Top with cheese, onions, and chicken. (Go to your local grocery store and buy one of those inexpensive roasted chickens. Or you can replace it with Thanksgiving turkey leftovers).


4. Bake 10 minutes longer or until crust is deep golden brown.
5. Sprinkle freshly chopped cilantro.

Slice and serve!

Sushi & Shaved Snow

Last Friday I met up with my friend and we went to Rowland Heights. Good times.
We were both feeling very hungry so we hit the nearest sushi place--Niko Niko Sushi.

Spicy rainbow rolls. Yummy.

Teriyaki bowl. It was alright.
Can't remember the name, but I loved this one.


And then we headed to Class 302 for some dessert. As the name suggests, Class 302 is a school-themed Taiwanese cafe also located in Rowland Heights. They're pretty well known among local Asians for their shaved snow (which is what we wanted to get), but they also sell other foods as well. The difference between shaved "ice" and shaved "snow" is that the shaved snow has finer consistency. Well, I love them both.
As you can see in the picture below, this place is quite small and it was crowded with people. We had to wait 20 minutes, but it was worth the wait.

We got green tea flavored shaved snow (with sweetened red beans, condensed milk, and big chunks of chewy rice cakes).
It was really good. Look at that amazing texture. Om nom nom!

Eat Cake Cafe

Sorry it's been a while since my last post. I've been quite lazy lately...
Last weekend we went to Rowland Heights. After singing karaoke for I don't know how many hours, we dropped by Eat Cake Cafe.

Here are the pictures...




The strawberry head thingy somehow reminds me of the Muppets.


They're organic and gluten free. Reasonably priced. The staffs are friendly.
Besides the cakes they also have other baked goods and drinks. I've only tried four of their cakes and a cup of green tea. They were good.




We took some home.
By the way, it's not Fork at Cake. It's Eat Cake. Seems like some people have problems reading their name correctly. (My sister, for instance.)

Chicken Mayo


There's a franchise take-out lunch brand called Hansot in Korea, and "Chicken Mayo" is one of their bestsellers. Here's how to make it at home.


Ingredients:

Boneless, skinless chicken thighs or breasts
Mayonnaise
Eggs
Rice, cooked
Panko breadcrumbs
Flour
Salt
Pepper
Olive oil

(Sauce)
2 teaspoons minced garlic
3 tablespoons corn syrup
1 tablespoon sesame oil
1 tablespoon sugar
5 tablespoons soy sauce


Directions:

1. Beat lots of eggs in a large bowl. Make fried eggs and chop them into strips. Hold on to the leftover eggs for step 2.
2. Season chicken with salt and pepper. Coat them in flour, shaking off any excess. Dip them into the egg, and then coat them with breadcrumbs. 
3. Heat 1/4 inch of oil in a large skillet over medium-high heat. Place chicken in the hot oil, and cook each side until golden brown. Drain the oil. Slice them into strips.
4. In a small sauce pan, add soy sauce, sesame oil, sugar, garlic, and corn syrup. Bring to a boil, then simmer for a minute. Stir well.


5. Finally, add everything in a bowl of cooked rice and serve.


Mix well, and...om nom nom!

I should have used a squeeze bottle for mayo...it doesn't look as pretty. Anyway, it sure tasted good, and that's all that matters. By the way, don't add too much mayo if you're not a big time mayoholic like me.
