Mommy's Udon

This is my mom's recipe. Well, this isn't what she used to make me when I was little, I can't really remember when she came up with this recipe. She was not the best cook in the world back then, but she has improved a lot over the years. (It's a compliment! I love you, mom.) Anyhow, I love this recipe because it's so easy to make and delicious.

You can find all the ingredients at East Asian markets.

Ingredients:

Udon noodles
Asian fish cakes, sliced
Daikon (white Asian radish), cut into big chunks
Dried anchovies
Dried kelp
Udon tsuyu (soup base for udon)
Green onions, finely chopped
Water






Directions:

1. Pour water into the pot and add the anchovies, kelp, and radish. Let it boil for 30 minutes.
2. Reduce heat, remove the ingredients, and add tsuyu. Let it simmer for a couple minutes.
Now the soup part is done.
3. In a serving bowl, add the noodles, fish cakes, and green onions.
4. Pour the soup and serve.
